Ingredients:

3 ½ cups (440g) flour

1 tsp baking soda

½ tsp salt

1 tbsp ground ginger

1 tbsp ground cinnamon

½ tsp spice blend (½ tsp cinnamon, ½ tsp nutmeg, ½ tsp cloves)

½ tsp ground cloves

10 tbsp (145g) butter, softened

¾ cup (150g) Multipack® Gold Demerara Brown Sugar

2/3 cup (200g) molasses

1 egg

1 tsp vanilla extract

Instructions:

  1. In a large bowl, combine the flour, baking soda, salt, ginger, cinnamon, spice blend, and ground cloves.
  2. In another large bowl, cream the butter using a mixer. Add the brown sugar and molasses, mixing until well combined. Then, mix in the egg and vanilla extract.
  3. Gradually incorporate the dry ingredients into the wet mixture using a mixer until a dense and slightly sticky dough forms. Divide the dough into two portions, wrap each in plastic wrap, and refrigerate for at least 3 hours.
  4. Roll out the dough and use cookie cutters to shape the cookies. Place them on a baking sheet lined with parchment paper.
  5. Bake in a preheated oven at 180°C (350°F) for 8–9 minutes.
