Ingredients:
1 ½ cups flour
1 tbsp baking powder
2 tbsp Multipack® Demerara Brown Sugar
A pinch of salt
1 ¼ cups milk
2 eggs
2 tbsp melted butter, plus extra for frying
1 tsp vanilla extract
Instructions:
- Mix the dry ingredients: In a large bowl, combine the flour, baking powder, Multipack® Demerara Brown Sugar, and salt. Stir well to evenly distribute the ingredients.
- Mix the wet ingredients: In a separate bowl, beat the eggs. Add the milk, melted butter, and vanilla extract. Mix until well combined.
- Combine the ingredients: Pour the wet mixture into the dry ingredients. Gently mix until a smooth batter forms. Do not overmix – small lumps are fine.
- Cook the pancakes: Heat a skillet over medium heat and lightly grease it with butter. Pour approximately ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges are set, then flip and cook for another 1–2 minutes until golden brown.
- Serve: Serve warm with your favorite toppings – honey, maple syrup, fresh fruits, or an extra sprinkle of Multipack® Demerara Brown Sugar for a caramelized touch.
Tip: For an extra boost of flavor, add a pinch of cinnamon or some grated lemon zest to the batter.
