Ingredients:

1 ½ cups flour

1 tbsp baking powder

2 tbsp Multipack® Demerara Brown Sugar

A pinch of salt

1 ¼ cups milk

2 eggs

2 tbsp melted butter, plus extra for frying

1 tsp vanilla extract

Instructions:

  1. Mix the dry ingredients: In a large bowl, combine the flour, baking powder, Multipack® Demerara Brown Sugar, and salt. Stir well to evenly distribute the ingredients.
  2. Mix the wet ingredients: In a separate bowl, beat the eggs. Add the milk, melted butter, and vanilla extract. Mix until well combined.
  3. Combine the ingredients: Pour the wet mixture into the dry ingredients. Gently mix until a smooth batter forms. Do not overmix – small lumps are fine.
  4. Cook the pancakes: Heat a skillet over medium heat and lightly grease it with butter. Pour approximately ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges are set, then flip and cook for another 1–2 minutes until golden brown.
  5. Serve: Serve warm with your favorite toppings – honey, maple syrup, fresh fruits, or an extra sprinkle of Multipack® Demerara Brown Sugar for a caramelized touch.

Tip: For an extra boost of flavor, add a pinch of cinnamon or some grated lemon zest to the batter.
